		<description>I am a chef, and have been in the restaurant business for over 30 years.  After reading Michael Pollan&#039;s Omnivore&#039;s Dilema, and having just returned from 3 weeks in Italy,  I am thoroughly convinced that the laws regulating the sale of meat and poultry to restaurants, which essentially make it impossible to use healthy, grass fed livestock need to be changed.  There must be a way.  What, where, and How?</description>
